Recent additions within the sprawling complex are two homegrown restaurants, Kayu Kitchen + Bar and Marisse Patisserie, which are owned and managed by Francis Sy and Marisse Sy.
Pastry chef Marisse inherited her love for baking from her mom Merdecitas Alvarez who, until her passing recently, used to oversee the day-to-day operations of the family- owned resorts — the Montebello and Costabella.
Marisse’s passion for creating delightful desserts and dishes continues in her son, chef Francis “Izzy” Sy, who runs Kayu and is responsible for the restaurant’s savory offerings. Chef Izzy studied at the Culinary Institute of America in Napa Valley, California. He spent two years at Iron ChefMasaharu Morimoto’s restaurant, Morimoto, where his inclination for reinventing food and flavors was kindled.Chef Izzy’s personal picks are the glazed salmon with teriyaki sauce, sushi rice cake, and
Chef Izzy’s personal picks are the glazed salmon with teriyaki sauce, sushi rice cake, and togarashi, as well as the Kayu skillet of short ribs, which takes three days to cook. Expect these and more at the restaurant, which stands proud in its 1950s architectural design and accents. With custom-made furniture and striking lighting fixtures, the interiors were designed by Marisse herself, with additional structural concept by Ed Gallego and Mirella Gallego. From the Cebuano word
From the Cebuano word kalayo, which directly translates to fire or passion, Kayu gives Cebu a hot dining experience that satisfies the five senses, staying true to the blazing passion that is common in Cebuanos. As far as tastes go, Kayu pays tribute to the richness of Cebuano culture while incorporating elements from Californian cuisine, creating unique and delicious flavors on the palate.
Kayu Kitchen + Bar is a perfect fit for 32 Sanson, where the love for family and food is celebrated, bringing to life the distinct Rockwell lifestyle. Here, you can enjoy all sorts of delicious dishes with some very unusual presentations and its definetly a unique experience.
